Ageing

This wine is produced in partnership with the Tonnellerie Dargaud-Jaegle coopers, which produces a one-off style which perfectly corresponds to the profile of these vineyards. To create this cask, the wood for the staves undergoes a rigorous selection. The drying period lasts 36 months (instead of the usual 18 months) and the staves are continually rotated throughout this ‘ageing’ period in order to purify the wood in a uniform manner.
This wine is aged for one year on fine lees for 100% in oak casks composed of new, one-wine and two-wine casks. In order to preserve the aromas, the wine has not undergone any filtering.
